Soufflé is a classic dessert popular in Taiwan
,Japan
and Korea
for a long time.
It’s an excellent dessert
+ coffee combo, and its preparation is quite simple!
You’ll need:
Eggs
– 2ea
Sugar
– 25g
Cake flour
– 35g
Milk
– 4 teaspoons
Lime juice
– a little
Vanilla extract
(optional)
1. Separate the egg whites and yolks.
2. Whip the egg yolks with milk (22g), add in 1/2 teaspoon of Vanilla extract.
3. Mix the egg yolks with flour (sifted 35g).
4. Add a little lime juice to the egg whites and remove any debris.
5. Add 1/3 of the sugar to the egg whites and stir, beat until many bubbles form, then add another 1/3 and continue to stir.
6. Add the remaining sugar and continue to stir until the egg whites stand stiff.
7. Mix the egg whites and yolks, and transfer into a piping bag.
8. Add oil to a pan, and fry until both sides are colored.
9. Top with fruits, cream, maple syrup or anything else you’d like!
